Peaches are in full swing for us here in Northern California. My Community Supported Agriculture (CSA) fruit box has been full of this particular stone fruit, and I’ve been exploring many different ways to prepare peaches. Since my husband is currently deployed, I’ve been drawn to the least time-intensive options possible. Easy is the name of the game right now. And a no-cook peach salsa is the perfect way to use them up!
Fruit salsas, in general, are one of my favorite ways to dress up chicken, fish, or pork. The natural sweetness of the fruit brings out the flavors of the meat. Peach salsa is a lovely cooling addition to a summer meal. The combination of peaches, tomato, onion, and basil makes a tangy, sweet treat you’ll love.
Summer Peach Salsa
Ingredients:
- 2 medium peaches
- 2 medium tomatoes
- 1/4 cup red onion, diced
- 2 tbsp. fresh basil, chopped (try mint instead of basil for a fresh variation!)
- Juice of a 1/2 lemon
Directions:
Step 1: Dice one of the tomatoes and one of the peaches.
Step 2: Roughly chop the other peach and tomato.
Step 3: In a blender or food processor, combine the roughly chopped peach and tomato and run on low until the mixture has liquefied but is still chunky.
Step 4: Combine all ingredients in a medium bowl and mix well.
Step 5: Chill for 1/2 an hour to let flavors develop and enjoy!
