One of my favorite “snacks” is chips and dip, but I try to limit that. To distract myself with something else crunchy and dippy, I use celery, carrots, or apples in a nut butter and cream dip.
It is also a great way to get kids more interested in celery and carrots (if they aren’t already).
I’ll share the basic recipe and some options for the dipping sauce that I really like.
Smooth Peanut Butter Dip
Ingredients:
- Sliced carrots, celery, apples, mangoes, papaya, or any other fruit/veggie you can cut to dip!
- ½ cup of powdered roasted peanuts (or PB Fit Peanut Butter Powder)
- ¼ cup of maple syrup or honey
- ¼ tsp. of sea salt
- Optional
- ¼ cup of yogurt or softened cream cheese
- 2 tbsp. of collagen powder
- 1 tbsp. of Earthley’s Electrolyte Powder
Directions:
Step 1: Combine the peanut powder and honey (or maple syrup).
Step 2: If adding collagen or electrolyte powder, do so now.
Step 3: Whip the yogurt or cream cheese into the peanut mixture.
Step 4: Serve immediately and refrigerate any leftovers.
In the case of a peanut or dairy allergy, coconut cream and roasted pumpkin would be yummy, too, I bet!
This works great for parties, or whip it into jelly jars and stick the carrots right into it for an “on the go” snack!
