Have you ever combined the delicious flavor of taco seasoning with the taste of grass-fed beef and fresh produce? Of course you have! We’ve all enjoyed tacos at least once, but have you ever added all that to a pot with chicken bone broth? If you haven’t, this is what I like to call taco soup.
Taco soup is healthy, yummy, and easy (the three things moms love most besides their children)! Sometimes, I make this recipe for my weekly lunches. It’s great because it’s 6 – 8 servings. Not to mention, it’s filling and perfectly balances fat, vegetables, and meat!
Taco Soup
Ingredients:
- 2 – 3 tbsp. olive oil
- 1 – 1.5 lbs. grass-fed ground beef (I use less if it’s for a night’s dinner, more if it’s for a whole week of lunch)
- 1/2 lb. black beans, soaked
- 1/2 cup onion, chopped
- 1 large green pepper, chopped
- 1 jalapeno, minced (optional)
- 4 – 6 tbsp. taco seasoning
- 1/2 lb. mixed vegetables
- 1 28-oz. can crushed tomatoes (or 3 cup tomato juice)
- 4 – 6 cups chicken bone broth
Directions:
Step 1: Heat olive oil in a large soup pot before adding onion, beef, and pepper.
Step 2: Cook until veggies are soft and meat is brown.
Step 3: Add beans, taco seasoning, mixed vegetables, tomato juice/crushed tomatoes, and chicken broth.
Step 4: Let the soup cook for 1 – 2 hours until the veggies are cooked and flavors are melded.

just discovered your site a couple days ago thru your emails to CHOICE:) and i like it!yum! i decided to try this for our lunch today…i added some finely chopped beef liver for some of the ground beef and used water for some of the broth as i am constantly running out of broth:) my daughter and i really enjoyed it! and spicy is good to hide the liver flavor, which is NOT my favorite, but i try to eat it:) thanks for all your posts!
