Hot weather means cool treats for our wild crews! I love these because they have different options to eat them and a dual purpose – they can even serve as an ice pack for a while!
I included Earthley’s Super Foods Powder because my kids (and I) LOVE the taste. It contains antioxidant-rich fruits, vegetables, herbs, and even a mushroom!
The foods used in this are acai berries, blueberries, raspberries, strawberries, tart cherries, beets, cranberry, ginger root, burdock root, and Chaga mushroom.
You can read about these ingredients in our blog, 20 Super Foods and Why You Need Them.
Coconut water is a great choice for some electrolytes! My kiddos are not fans of the taste, so I just use filtered water.
Super Food Pops
Ingredients:
- 2 cups of unsweetened applesauce
- 3 tbsp. of Earthley’s Super Food Powder
- 3 tbsp of coconut water or filtered water
Directions:
Step 1: Mix all ingredients in a quart jar and shake.
Step 2: Pour into a mold of your choice (I like these because they fit in jars nicely) with paper candy sticks.
Step 3: Place in a freezer for about 4 hours (or more).
Step 4: After frozen, place the “pops” into a jar or baggie. Keep frozen until ready to leave.
If taken on a trip as an “on the go” snack, they can be eaten early on as the ice pops. If not, they will melt while keeping the food around them cooler, but no worries – they can be eaten as flavored applesauce with a spoon or just drink it from the jars!
