Is there such a thing as eating too much stuffed peppers? We love stuffed peppers so much that we have them at least every couple of weeks (sometimes weekly). I told you we love stuffed peppers! These stuffed peppers are fatty (the good kind) and very yummy.
Good fat?
You probably read that and nearly left the website, but wait a minute! Fat is an essential part of a balanced diet. Unfortunately, we’ve been told that low-fat products are healthier, in turn demonizing fats (even healthy ones). If you read our blog, 7 Reasons Fat Isn’t Making You Fat, you know fat provides energy while helping break down or absorb fat-soluble vitamins. The right fats are so good for you that they improve immunity and help with weight loss. Yes, you read that right: fat can help you lose weight!
Now that I’ve blown your mind, let me blow your tastebuds with this deliciously simple recipe.
Stuffed Peppers
Ingredients:
- 1 lb. ground turkey or grass-fed beef
- 2 tbsp. olive oil
- 1 – 2 cloves garlic, minced
- ¼ cup onion
- ½ cup brown rice, uncooked
- 28 oz. tomato puree
- ½ tsp. oregano
- 1 tsp. basil
- ½ tsp. salt (or to taste)
- ¼ tsp. pepper (or to taste)
- 4 green peppers
- Mozzarella cheese (optional)*
Directions:
Step 1: Preheat oven to 350 and cook the rice according to package directions.
Step 2: Meanwhile, brown the meat, onions, garlic, and olive oil together.
Step 3: Add spices and tomato puree; let the mixture simmer for 10 – 15 minutes to absorb the flavors.
Step 4: Add the cooked rice to the meat and tomato mixture.
Step 5: Cut green peppers in half, deseed, and wash before placing peppers in a baking dish and stuffing with mixture.
Step 6: Bake for 30 – 40 minutes or until peppers are tender. If cheese is desired, add it in the last 5 minutes or so of baking time. Serves 4.
If dairy-free, you could use a plant-based alternative or omit it completely. Thankfully, these stuffed peppers are flavorful enough to be cheese-free. Sometimes, we use an extra 3/4 cup of rice to stretch the filling further. I hope you enjoy this recipe as much as my family does!

when I was a kid, my brother and I didn’t like the taste of the whole pepper cooked. To remedy that, my step-father began to chop the pepper into pieces with the onion.. It was a hit then and it’s a hit with my children now. We call it pepper sauce. Everything would be the same except where you add the pepper, there is no baking (more hot summer home friendly), and we serve it over rice. This freezes well too.
