Zero-waste recipes are my favorite. There’s nothing like buying a chicken, making dinner with it, and using the scraps to make homemade gravy and bone broth. Less I have to make (or buy) later, and dinner is already done; it’s a win-win!
One day, as I was roasting a chicken for dinner, gravy, and bone broth, I thought…I bet some yummy herb-roasted potatoes would be great with this. I’d just gotten some delicate, organic Yukon gold potatoes from our Community Supported Agriculture (CSA), so I was dying to try them. Although Ben (my husband) wasn’t a fan, the kids and I loved them. So here they are:
Herb-Roasted Potatoes
Ingredients:
- 1 lb. small potatoes (yellow or red)
- 2 tbsp. raw butter
- 2 tbsp. olive oil
- 1 tsp. rosemary
- 1 tsp. thyme
- 1/2 tsp. sage
- 1/2 tsp. parsley
- 1/2 tsp. sea salt
- 1/4 tsp. black pepper
Directions:
Step 1: Mix everything together in a baking dish.
Step 2: Bake at 350ºF for about 40 min. (I actually baked at 325ºF because that’s what my chicken was cooking at). Serve.
Easy and yummy!

Love potatoes! Love fresh herbs! Love roasted chicken! Thanks for the recipe. I have a roasting chicken in the fridge and plan on popping it in the oven tomorrow. I'm going to "stuff" it with a cut up lemon and onion… as well as some fresh basil. After reading your post, I think I will add some potatoes to the roasting pan as well.
