As a kid, I used to love Hamburger Helper. But these days, just read the ingredients on that box…ick. No thanks.
Still, I love one-dish meals. Quick…easy…delicious…what’s not to enjoy? Especially during the cooler months.
I make this cheeseburger pasta as a quick lunch or dinner. My boys especially love it (and my 11-year-old can eat a lot now…). We add some steamed broccoli and fresh fruit on the side and it’s a balanced, healthy meal. Winning!
Recipe Collection: Cheeseburger Pasta
Ingredients:
- 1 lb. ground beef (I chose grass-fed for its health benefits)
- 1 medium onion, chopped
- 3 – 4 cloves garlic, minced or crushed
- 4 cups chicken or beef stock (here’s how to make homemade)
- 1 lb. pasta (I use gluten-free; whole wheat also works)
- 2 cups milk
- 2 tbsp. arrowroot powder
- 2 cups cheddar cheese, shredded
- Salt to taste
Step 1: Cook the ground beef in a large skillet until brown (I use my 12″ enameled cast iron)
Step 2: Add the onion and garlic and cook a few more minutes
Step 3: Sprinkle with a little salt and add stock; bring to a boil
Step 4: Add the pasta, and cook, stirring frequently
Step 5: Mix the arrowroot and milk in a measuring cup until smooth
Step 6: Pour the milk mix into the pasta mix and stir constantly until a thick sauce forms
Step 7: Add the cheddar and stir until melted and smooth
