This recipe came to be as a part of my postpartum meal prep. The last thing I wanted to think about after having a baby was what to eat. Thankfully, I didn’t have to because I planned ahead.
This recipe freezes well, is delicious, and the best part is, it can even be made for dinner. Who doesn’t like breakfast for dinner (brinner, if you will)? Whether making breakfast in the morning or planning meals for the week, sweet potato hash is a must-try.
Sweet Potato Hash
Ingredients:
- 2 tbsp. coconut oil
- 1 medium yellow onion, chopped
- 1 large sweet potato, peeled and cut into small dice
- 1 ½ Ibs. ground meat (turkey, beef, chicken, pork, etc.)
- 1 small can of tomato paste
- 4 cloves garlic, minced
- 2 tsp. oregano
- 2 tsp. cumin
- 2 tsp. paprika
- Pinch of cayenne pepper
- 1 tsp. sea salt
- ½ teaspoon black pepper
Directions:
Step 1: In a large cast-iron skillet, sauté onion and potatoes in oil over medium heat.
Step 2: Add in meat, tomato paste, and seasonings- stir to combine.
Step 3: Sauté over medium heat until meat is browned and cooked through, 7-10 minutes.
Step 4: Serve inside warmed corn tortillas, wrapped in lettuce leaves or alongside fried eggs.

Baby’s due in 7 weeks. I’ve got several pans of freezer meals stocked. But you can’t eat casserole every night. So right now I’m planning 2 months worth of meals. I’m listing them a week’s worth at a time, which cookbook & page number, and then making a grocery shopping list. All so that hubby cn go out once a week to do the grocery shopping and whichever of us is cooking has a pre-planned list with all the ingredients on hand. I’m also scoping now to purchase good deals through Amazon, Entertainment, Groupon and the like for those times when we are just too darn tired to cook, sick of the house, and need a restaurant meal instead.
