Spicy Chicken Sandwiches

Ingredients
  

  • 1 lb. chicken breast cut into 4 - 6 thin slices
  • 1 cup sprouted flour
  • 1/2 tsp. parsley
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. cayenne pepper more or less to taste
  • 1 egg
  • 1/4 cup cream
  • 1/4 cup chili or red pepper sauce
  • Oil for frying lard, beef tallow, coconut oil, or palm oil -- not vegetable oil or shortening!
  • Buns of choice

Method
 

  1. Mix the flour and spices together in a medium bowl.
  2. In another bowl, mix cream, egg, and pepper sauce.  You can add more or less pepper sauce to taste; this is moderately spicy (but less spicy than Wendy's chicken sandwich).  I'd probably add more next time.
  3. Heat the oil over medium-high heat in a large frying pan, about 1/2" deep.
  4. Dip the chicken into flour, then into the cream mixture, and back into the flour.
  5. Fry over medium heat for 7 - 8 minutes per side until the outside is golden brown and the chicken is cooked through.
  6. Remove the chicken to a plate covered with a towel to drain and cool.
  7. When ready to serve, place the chicken on the buns and top with lettuce, tomato, cheese, homemade mayo, barbecue sauce, or other toppings as desired.
