Corn Muffins

A fantastic sweet corn muffins made from real food ingredients.

Ingredients
  

  • 1 cup cornmeal
  • 1 cup sprouted flour
  • 1 1/2 tsp. sea salt
  • 1 tsp. baking soda
  • 4-6 tbsp. honey
  • 2 eggs
  • 6 tbsp. butter melted
  • 1 cup milk

Method
 

  1. Preheat oven to 400ºF.
  2. Mix together all the dry ingredients in a medium bowl.
  3. Add the honey, eggs, and butter and stir gently.
  4. Add a little milk at a time until a medium-thick batter forms; about 1 cup.
  5. Spoon into a prepared muffin tray or an 8×8 baking pan.
  6. Bake for 12–15 minutes for muffins or 15–20 for an 8×8 pan. Serve hot with lots of real butter.
