Cheesy Vegetable Casserole

Ingredients
  

  • 1 lb. mixed vegetables I used a frozen "California blend" of broccoli, cauliflower, and carrots
  • 1/2 cup chopped onion
  • 4 tbsp. butter
  • 2 tbsp. flour or 1 tbsp. arrowroot
  • 1 cup milk
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • Sea salt and pepper to taste

Method
 

  1. Melt the butter in a medium saucepan.  Add your onions and saute until soft, about 5 minutes.
  2. Add the flour.  I often use unbleached flour for dusting and thickening if I only need a small amount.  I have successfully used arrowroot powder/flour many times, though.
  3. Stir this together, then add the milk.
  4. Cook and stir on medium heat for a few minutes until the sauce is thickened.
  5. Add your veggies to an 11x7 baking dish.
  6. Top with sour cream.
  7. Pour in the white sauce and a pinch of salt and pepper.  Add the shredded cheese, reserving a little for the top.
  8. Stir it all up and top with cheese.
  9. Bake at 350 for 20 - 30 minutes, until bubbly and the veggies are soft.  So simple and yummy!
