Baked Apple Cinnamon Oatmeal

Ingredients

  • 1 stick of butter divided
  • 4 cups diced apples about 2 large apples
  • 1/2 cup honey divided
  • 3 teaspoons cinnamon divided
  • 4 cups  gluten-free oats
  • 1 tablespoon baking powder
  • 1 teaspoon ginger
  • 1 teaspoon nutmeg
  • 1/4 teaspoon  salt
  • 4 eggs
  • 1 cup milk
  • 1 cup  kefir or yogurt

Instructions

  • Preheat oven to 350ºF.
  • Place the stick of butter in a 9x13 pan and place it in the oven to melt butter.
  • In a large bowl combine apples, 2 teaspoons cinnamon, and mix to coat.
  • Once butter is melted, pour 1/4 cup from the pan and set aside.  This should leave you with about 1/4 cup left in the pan.
  • Pour the apple mixture into the pan and spread evenly.  Drizzle 1/4 cup of honey over the apples.
  • Combine the oats, 1 teaspoon cinnamon, baking powder, ginger, nutmeg, and salt.  Mix to combine.
  • Add the eggs, milk, kefir, remaining 1/4 cup honey, and butter to the oat mixture.  Mix to combine and pour over the apple mixture.  Spread evenly.
  • Bake at 350ºF for 45 minutes.

Notes

Want to soak your oats for improved nutrition?  No problem.  Omit the milk and replace it with 1 cup of water.  The night before or 12 hours before preparing the dish, mix the oats, water, kefir, or yogurt and stir well to guarantee all the oats are moist.  Cover with a towel and let soak in a warm place.
