Potato Skins

Ingredients

  • 4 - 6 medium potatoes washed, poked, and baked
  • 2 tbsp. butter
  • 4 oz. shredded cheddar cheese
  • 2 - 3 strips of bacon cooked until crisp
  • Green onions sour cream, etc. for serving

Instructions

  • Scoop the skins out (leaving some potato left) and lay them on a baking tray.
  • Put a small piece of butter into each, about 1/2 tsp.
  • Stick this in the oven at 350ºF for 5 - 10 minutes until the butter is melted.
  • Once they come out of the oven, add the shredded cheese and top with bacon.
  • Stick this back in the oven for another 5 minutes or so (until the cheese is melted).
  • Remove from the oven and top with bacon, green onions, and sour cream, if you like.
