Cinnamon-Spelt Pancakes

Ingredients

Cinnamon-Spelt Pancake Mix

  • 4 cups spelt flour freshly ground if possible
  • 4 tsp. cinnamon
  • 1/8 tsp. salt optional, but use non-iodized salt if you do
  • 8 tsp. baking powder (aluminum-free is best)

Cinnamon-Spelt Pancakes

  • 1 cup of dry Cinnamon Spelt Pancake mix
  • 1 cup of raw milk plus extra
  • 1 cup raw milk yogurt if soaking
  • Butter or coconut oil for greasing pan or griddle

Instructions

  • Combine all pancake mix ingredients in a medium-sized container for storage in the freezer or pantry.
  • Optional: If soaking, mix 1 cup of pancake mix and 1 cup of yogurt in a glass bowl.  Cover with a lid or kitchen towel and allow the mixture to sit overnight on your counter.
  • Heat a greased griddle or pan to medium heat.
  • As the griddle or pan is heating, combine milk and pancake mix in a small bowl.  I allow mine to sit a few moments to determine if I need to add more milk.  The mixture should be pourable.
  • When the griddle or pan is hot, pour the desired amount of combined pancake mix onto the griddle for each pancake.
  • Cook until the pancake is browned on one side and bubbles form.  Flip and brown on the other side to the desired doneness.
  • Serve with fresh strawberries, berry topping, or grade B maple syrup.
