Combine all pancake mix ingredients in a medium-sized container for storage in the freezer or pantry.
Optional: If soaking, mix 1 cup of pancake mix and 1 cup of yogurt in a glass bowl. Cover with a lid or kitchen towel and allow the mixture to sit overnight on your counter.
Heat a greased griddle or pan to medium heat.
As the griddle or pan is heating, combine milk and pancake mix in a small bowl. I allow mine to sit a few moments to determine if I need to add more milk. The mixture should be pourable.
When the griddle or pan is hot, pour the desired amount of combined pancake mix onto the griddle for each pancake.
Cook until the pancake is browned on one side and bubbles form. Flip and brown on the other side to the desired doneness.
Serve with fresh strawberries, berry topping, or grade B maple syrup.
