Spicy Chicken Sandwiches

Ingredients

  • 1 lb. chicken breast cut into 4 - 6 thin slices
  • 1 cup sprouted flour
  • 1/2 tsp. parsley
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. cayenne pepper more or less to taste
  • 1 egg
  • 1/4 cup cream
  • 1/4 cup chili or red pepper sauce
  • Oil for frying lard, beef tallow, coconut oil, or palm oil -- not vegetable oil or shortening!
  • Buns of choice

Instructions

  • Mix the flour and spices together in a medium bowl.
  • In another bowl, mix cream, egg, and pepper sauce.  You can add more or less pepper sauce to taste; this is moderately spicy (but less spicy than Wendy's chicken sandwich).  I'd probably add more next time.
  • Heat the oil over medium-high heat in a large frying pan, about 1/2" deep.
  • Dip the chicken into flour, then into the cream mixture, and back into the flour.
  • Fry over medium heat for 7 - 8 minutes per side until the outside is golden brown and the chicken is cooked through.
  • Remove the chicken to a plate covered with a towel to drain and cool.
  • When ready to serve, place the chicken on the buns and top with lettuce, tomato, cheese, homemade mayo, barbecue sauce, or other toppings as desired.
