Raspberry Thyme Mocktail

This recipe makes about eight 1-ounce servings. There are two methods to make this mocktail -- heat accelerated (like tea) or slow-drawing (like a simple concoction). Both methods are water extractions.

Ingredients

  • ½ cup of raspberries
  • 1 lemon sliced (or a ¼ cup of juice)
  • 1 orange sliced (or a ¼ cup of juice)
  • 2 tsp. of thyme
  • 2 tsp. of astragalus
  • 1 cup of filtered water
  • 2 tbsp. of honey
  • ½ cup of apple cider vinegar or kombucha

Instructions

Heated Directions

  • Mix all ingredients (except honey and ACV/kombucha) in a small pot of water. Heat on med-low for 15 minutes.
  • Strain and squeeze out all the juices. Then, add the honey and ACV/kombucha to mix thoroughly.
  • Pour into shot glasses for a fun little mocktail hour!

Slow-Drawing Directions

  • Heat water to boiling.
  • Mix all ingredients (including the now hot water) in a 1-quart jar with a lid (squeeze the citruses as you put them in).
  • Shake the jar a few times and let it sit for at least 30 minutes. You can strain it if you prefer just the liquid after that, or just go ahead and pour!

Notes

If you do this slower method, you can reuse the fruit and herbs for another round (albeit slightly weaker). Refrigerate until used. It will last about 2 days.
