Sun-Dried Tomato Pasta

- 2-3 cloves garlic minced or crushed
- 1/2 c. sweet onion chopped
- 10-12 sun-dried tomatoes packed in olive oil chopped
- 2 medium ripe tomatoes chopped
- 2 tsp. basil
- 1 tsp. salt (or to taste)
- 2 tbsp. olive oil
- 8 oz. pasta
Heat olive oil in a pan. Add onion and garlic, and sauté until soft.
Add tomatoes and spices.
Cook until some liquid is gone and the flavor is blended all through the tomatoes.
Serve immediately over hot pasta. Add a sprinkle of parmesan or Romano for an extra treat.
