Baked Apple Cinnamon Oatmeal

Ingredients

  • 1 stick butter, divided
  • 4 cups diced apples, about 2 large apples
  • 1/2 cup honey, divided
  • 3 tsp cinnamon, divided
  • 4 cups gluten free oats
  • 1 tbsp baking powder
  • 1 tsp ginger
  • 1 tsp nutmeg
  • 1/4 tsp salt
  • 4 eggs
  • 1 cup milk
  • 1 cup kefir or yogurt

Instructions

  • Pre-heat oven to 350 degrees.
  • Meanwhile place the stick of butter in a 9x13 in pan and place in oven to melt butter.
  • In a large bowl combine apples, 2 teaspoons cinnamon, and mix to coat.
  • Once butter is melted pour 1/4 cup from the pan and set aside. This should leave you with about 1/4 cup left in the pan.
  • Pour the apple mixture into the pan and spread evenly.  Drizzle 1/4 cup of honey over the apples.
  • Combine the oats, 1 teaspoon cinnamon, baking powder, ginger, nutmeg, and salt. Mix to combine.
  • Add the eggs, milk, kefir, remaining 1/4 cup honey, and butter to the oat mixture. Mix to combine and pour over the apple mixture. Spread evenly.
  • Bake at 350 for 45 minutes.
