A few weeks ago, I made the decision that we *needed* to have these silicone popsicle molds (pictured above). We used to have plastic ones, the type that you have to stand upright in the freezer. There’s simply no room for such a mold in our freezer currently (which is much smaller than what we used to have), and the old mold would be too small. I think it held 10 popsicles, which is great when you have 2 kids — which I did then — but that’s not really going to cut it when you have 4. Never mind if you want one sometimes, too….
Anyway, I ended up ordering 2 sets of these, so I have 16 of them. I think I want to order 2 more sets in the next few weeks so that I can make a big batch all at once and have them on hand. That will be really handy when my next baby comes because they’ll be a healthy and easy snack for my older kids — and one that will last since it’s not really perishable if frozen.
These are neat because they are individual. They have lids on them and you can stick them in different places in the freezer. I usually put them in a gallon-sized bag. 16 fit about perfectly in one bag.
To warn you, the lids do pop off easily, so don’t hand a full and unfrozen popsicle to a little one or you will end up with a mess. My daughter decided to try that out with an empty one, and yes — even with nothing inside, squeezing it made the lid pop off. But if handled carefully, they are no problem. They do not leak if you turn them upside down. And when frozen, they are fairly easy for little ones to squeeze (and no longer messy).
Naturally, as soon as they arrived, we needed to try them out. It was close to grocery day, so our very first experiment was a simple lemon-lime popsicle. Everyone loved them and we’ll certainly come back to them. Once we finish trying out our other flavors, like orange creamsicle, chocolate and vanilla pudding pops, and so on. 🙂
- 3 lemons, juiced
- 3 limes, juiced
- 1/2 c. cane sugar or honey
- 5 c. filtered water
Step 1: Heat some of the water slightly — warm enough to dissolve the sugar or honey. Stir it in until well mixed.
Step 2: Add the lemon and lime juices and the remaining water and stir.
Step 3: Pour into popsicle molds, being careful not to overfill. Add lids or sticks as desired, depending on the type of mold you are using.
Step 4: Freeze for at least 4 hours, preferably overnight. Serve.
See, super easy! Feel free to pour any juice or combination of juices into the molds as popsicles. If it’s just juice and/or water-based it will be very hard and icy when you eat it. We preferred some of the other popsicles because they had a softer texture out of the freezer. But those recipes will come later!
