A Soup-er Roundup: 35 Soups to Warm You Up!

Besides being comforting, soups are an easy one-pot dinner option for busy nights and many can be made quickly if you need. Here is a soup-er roundup of 35 yummy recipes for your next busy night.

This is the perfect time of year to enjoy all the amazing benefits of soup.  The cold wet weather is a great excuse to make as much delicious and nourishing soups as possible!

The Many Benefits of Soup

Besides being comforting, soups are an easy one-pot dinner option for busy nights and many can be made quickly if you need a last minute meal.  They are also an excellent way to clean out the scraps in your fridge’s veggie drawer.

If you’re trying to save on your grocery budget, adding soups to your meal plan is a simple way to stretch your dollars.  Soups are filling and you can make delicious vegetable-based soups or stretch small amounts of meats in a large batch of soup.

Soups are also a wonderful food for nourishing your body while sick.  Since all of the ingredients are normally well cooked they are also easily digestible.  Using bone broths as a base further boosts their nutritional value.

The soup recipe I’m sharing below is packed with vegetables and comes together very quickly.  It’s a great vegetable-based soup that gets a protein boost from beans.  If you prefer a true vegetarian soup, use a homemade vegetable broth as the base.  I prefer to use a bone broth (either chicken or beef) for a nutritionally packed soup.

Winter Vegetable Soup

Ingredients:

  • 2 tbsp expeller pressed coconut oil
  • 1 large onion
  • 4 large carrots, peeled and cubed
  • 5 stalks celery, peeled and cubed
  • 3 cloves garlic, minced
  • 2 quarts bone broth
  • 2-3 lbs potatoes, peeled and cubed
  • 1 medium butternut squash, peeled and cubed
  • 1 cup green beans, cleaned and chopped
  • 1 1/2 cups peas
  • 1 1/2 cups corn
  • 1 16oz can diced tomatoes
  • 4-6 cups chard, cleaned and chopped
  • 2 bay leaves
  • 1 tsp parsley
  • 1 piece dulse
  • 2 cups cooked black beans
  • 2 cups cooked pinto beans
  • 1- 1 1/2 tsp sea salt

Directions:

In a large soup pot, melt coconut oil over medium heat.

Cook onions, carrots, celery, and garlic until they start to soften, about 5 minutes.

Add remaining ingredients except for beans and salt.

Bring to a simmer and reduce heat to low.

Cook covered for 30-45 minutes.

Add beans during last 10 minutes of cooking.

Add salt to taste.
