Recipe Collection: Cheesy Vegetable Casserole

I love vegetables in all forms.  I love them in soups, salads, by themselves, steamed and covered in butter, or sauteed with bacon…  That’s why I always am looking for new ways to prepare them.  This casserole may be a good answer for people who may not like vegetables quite as much as I do.  Who doesn’t like vegetables when they are covered in cheese?  (Ironically, none of my family will eat this except me.)

This is fairly simple to put together, and it’s very yummy.  It could be prepared ahead of time and baked when you are ready, too.

Cheesy Vegetable Casserole

Ingredients:

  • 1 lb. mixed vegetables (I used a frozen “California blend” of broccoli, cauliflower, and carrots)
  • 1/2 cup chopped onion
  • 4 tbsp. butter
  • 2 tbsp. flour or 1 tbsp. arrowroot
  • 1 cup milk
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • Sea salt and pepper to taste

Directions:

Step 1: Melt the butter in a medium saucepan.  Add your onions and saute until soft, about 5 minutes.

Step 2: Add the flour.  I often use unbleached flour for dusting and thickening if I only need a small amount.  I have successfully used arrowroot powder/flour many times, though.

Step 3: Stir this together, then add the milk.

Step 4: Cook and stir on medium heat for a few minutes until the sauce is thickened.

Step 5: Add your veggies to an 11×7 baking dish.

Step 6: Top with sour cream.

Step 7: Pour in the white sauce and a pinch of salt and pepper.  Add the shredded cheese, reserving a little for the top.

Step 8: Stir it all up and top with cheese.

Step 9: Bake at 350 for 20 – 30 minutes, until bubbly and the veggies are soft.  So simple and yummy!

  2. Thank you for posting this recipe. I was looking for a different veggie recipe and this one was perfect. I didn’t have the medley bag so I used frozen broccoli, peas, fresh carrots and fresh zucchini. My family loved it.

  5. Made this tonight for my husband .. Absolutely nothing like I thought it was going to be .. Followed the recipe just like it states and it tasted horrible .. Pretty disappointed!! 🙁
