Recipe Collection: Simple French Toast

I do love French toast.  But I don’t love all the sugar that comes with a typical version.  See, I’m just not a fan of sugary breakfasts (and they’re really not good for anyone).  It’s possible, though, to make a hearty, not-too-sweet version of French toast that’s actually healthy.

Typical French toast starts with white bread, often which contains corn syrup or soybean oil, or other junky ingredients.  Then, it’s doused in eggs, milk, and sugar, fried, and covered with powdered sugar and/or maple syrup.

This version starts with whole wheat sourdough bread (which lends a tangy-sweet flavor to the finished dish), uses vanilla and cinnamon for a hint of natural sweetness, and finishes with just a small drizzle of maple syrup.  It’s perfect.  However, those used to the typical version might be surprised by it at first.

You can use milk for this dish, but I encourage using cream.  It coats the bread so much better and makes such a rich, lovely finished dish.  It’s so worth it.

Simple French Toast

Ingredients:

  • 4 – 6 slices sourdough bread (learn how to make your own sourdough bread)
  • 2 eggs (preferably from pastured chickens)
  • 1/2 cup grass-fed heavy cream
  • 2 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 2 – 3 tbsp. butter
  • Maple syrup for serving

Directions:

Step 1: In a medium bowl, beat the eggs, cream, vanilla, and cinnamon.

Step 2: Dip the slices of bread into the egg mixture.  If desired, slice into “sticks” about 1 – 1.5″ wide first.

Step 3: Melt some butter in a large frying pan over medium heat.

Step 4: Add the coated slices of bread to the frying pan and cook until golden brown on both sides, about 3 – 4 minutes per side.

Step 5: Remove from the pan and serve with a small amount of maple syrup for dipping, or drizzle a little syrup over the top.

  • Dip the slices of bread into the egg mixture.  If desired, slice into "sticks" about 1 - 1.5" wide first.
  • Melt some butter in a large frying pan over medium heat.
  • Add the coated slices of bread to the frying pan and cook until golden brown on both sides, about 3 - 4 minutes per side.
  • Remove from the pan and serve with a small amount of maple syrup for dipping, or drizzle a little syrup over the top.

Serve immediately.  If not, don’t add the maple syrup; cool the slices and freeze them.  They will reheat in the oven easily to make a quick breakfast.
