Recipe Collection: Simple Chicken Rice

If you’re used to the convenience of instant rice, it’s important to understand that this recipe isn’t cooked in an instant — more like 20-40 minutes (depending on the type of rice you use). This may not seem like it’s super quick, but you can walk away from it as it cooks, complete other tasks, and before you know it, your simple side is complete and dinner is ready. 🙂

Simple Chicken Rice

Simple Chicken Rice

Ingredients:

  • 2 tbsp. butter
  • 2 tbsp. minced onions or shallots
  • 1 cup white rice (or soaked brown rice, but you will need to increase the cooking liquid)
  • 1 1/2 cup chicken stock
  • 1 – 2 tsp. sea salt

Directions:

Step 1: Add the butter and onions (or shallots) to a medium frying pan.  I’m using shallots this time because that is what I had.

Step 2: Turn the heat on medium-high and sautee the onions (or shallots) until softened, about 5 minutes.

Step 3: Add the rice.

Step 4: Saute the rice until slightly golden and puffed, 5 minutes or so.

Step 5: Add the chicken stock and sprinkle a little salt.  Cover it and set a timer for 15 minutes.

Step 6: Fluff the finished rice and serve!  Simple and comes together in less than 30 minutes. 🙂

  1. That looks good, Kate! We like rice that’s cooked with salted water and then I mix in some butter and milk when it’s done. Heaven!
    I’ll have to try using chicken broth next time. 🙂

  4. What a simple way to dress up the rice. This was delicious! I added a pinch of turmeric for color.
